Progresso Lemon Pepper Panko and Michael Chiarello’s Bottega Cookbook Review & Giveaway

Let me start off this post by saying that Minnie Mama is by no means a Martha Stewart, a Julia Childs,or in this case a Mr. Michael Bottega so please don’t read this and expect an amazing  food blogger’s post. Also, there will be no pics of my finalized meal because as mentioned before I am not a food blogger and honestly my food tastes much better than is sometimes look, okay?!

Alright so w/ that said, let me tell you that I was super excited and honored to be given the chance from My Blog Spark and Progresso to review the new Progresso Lemon Pepper Panko and Michael Bottega’s cookbook! Seriously, I was honored. I consider myself a decent, dare I say pretty good cook, but I am definitely not a future contestant on Hell’s Kitchen!  Although thanks to this amazing new cookbook maybe I have a chance?

One of my favorite all-time recipes is chicken parmesan w/ a side of pasta lightly tossed w/ olive oil and garlic. It’s a delicious meal that’s easy to prepare, cooks quickly, and will please even the pickiest eater (i.e. the hubs). And now thanks to Progresso’s Lemon Pepper Panko and Michael’s Bottega cookbook, my fave recipe just got even more delicious! I used these breadcrumbs and followed his secret tips for the recipe and presto my recipe is transformed into the most  meal ever! I kid you not, everyone in my house devoured it and even asked for seconds. Yay for Minnie Mama and her crazy, awesome cooking skills — just kidding! My special thanks really goes out to Chef MichaelChiarello. Seriously, this man is a genius, check out what he has to say:

I also think the Progresso Lemon Pepper Panko sounds great for fish. I thaw, rinse, and pat it dry, then spray a baking dish large enough to lay fish in a single layer. Sprinkle with lemon, toss melted butter with panko and cover the fish with it, and bake till fish is done. Fish is best used as quickly as possible, by the way.
I also think the Progresso Lemon Pepper Panko would work well with a zucchini dish I make.

When I was newly married and wanting to make a special dinner for my husband and I for our first married Valentine’s Day. I thought I would make a chicken Limone. Well it was lemon alright. It is known between my husband and myself to this day almost 12 yrs later as Pucker Chicken. I mis read the amount of lemon. My husband took some bites and then I took a bite and there was no way we could eat this stuff.

Oh my goodness, Maureen. That is absolutely hysterical! I bet it will be the one story that will always make you guys laugh. 🙂

I did lots of crazy stuff when I was 1st married too so don’t feel bad. For example, did you know that you’re not supposed to put dish soap such as Dawn into a dishwasher? Honestly, I figured they both wash dishes so why not?! But apparently as I learned the hard way, they are two totally different kinds of soaps. Long story short, the whole kitchen was flooded out w/ bubbles. It was a disaster! Ha ha 🙂

I like a meal that is called Veggie Rotolo. It is a dish that is at a local Italian restaurant. Sooooo good.

My best cooking experience was when I made cupcakes for the people of a school get-together. I somehow managed to conceal the little spoon indents I made to pump them full of frosting (so its like stuffed with frosting when you bite into it) with another layer of frosting glaze on the top. everyone was in love with them!

I love Pizza – specifically round table pizza! ive tried to duplicate their crust so many times and it is just impossible!!!

I absolutely love pizza too! When I was prego w/ my daughter I didn’t like it and for the longest time afterwards I didn’t like it, but my love for it is back again — fortunately or unfortunately depending on how you look at it. Hee hee 🙂

I would use the Panko with some kind of fish recipe.

Do you cook fish often? I absolutely love fish and keep wanting to buy some for dinner, but honestly I am unsure as to how to cook it? Broil it or bake it? And then once I buy the fish, how long can I keep it in the fridge till I need to cook it? Silly questions, I know, but if you know the answers PLEASE help me out. Thank you! 🙂
